1. PALAK PANEER: A TIMELESS CLASSIC

Palak paneer is a quintessential North Indian winter dish. Creamy, spiced spinach gravy envelops soft cubes of paneer, making it both comforting and nutritious.

Ingredients:

2 cups fresh palak leaves

200 g paneer, cubed

1 onion, finely chopped

2 tomatoes, pureed

1 tsp ginger-garlic paste

1 tsp cumin seeds

½ tsp garam masala, salt, and chili powder to taste

Method:

Blanch and puree the palak leaves. Heat oil, sauté cumin seeds, onion, and ginger-garlic paste. Add tomato puree, spices, and cook until oil separates. Stir in the palak puree, simmer for 5-7 minutes, then fold in paneer cubes. Serve hot with roti or rice.

2. PALAK SOUP: A NUTRITIOUS WINTER WARMER

A light yet filling option, palak soup combines seasonal greens with aromatic spices, perfect for chilly evenings.

Ingredients:

2 cups palak, washed and chopped

1 potato, diced

1 onion, chopped

1 tsp olive oil

Salt, pepper, and a pinch of nutmeg
