APPLE CIDER COOKIES

1 cup apple cider

2 cups (240 g.) all-purpose flour

1 tsp. ground cinnamon

1/2 tsp. baking soda

1/2 tsp. kosher salt

1/4 tsp. ground nutmeg

3/4 cup (160 g.) packed light brown sugar

1/2 cup (1 stick) unsalted butter, melted

1/2 cup (100 g.) granulated sugar

1 large egg

COATING

4 Tbsp. unsalted butter, melted

1/2 cup (100 g.) granulated sugar

2 tsp. ground cinnamon

1. Cookies: In a small pot over medium heat, bring cider to a boil. Cook, stirring occasionally, until reduced to about 3/4 cup, 15 to 18 minutes. Let cool.

2. In a medium bowl, whisk flour, cinnamon, baking soda, salt, and nutmeg.

3. In a large bowl, whisk brown sugar, butter, and granulated sugar until combined. Add egg and 1/2 cup reduced cider (reserve remaining cider for coating); whisk until smooth. Add dry ingredients and mix until just combined. Cover and refrigerate until chilled, at least 2 hours and up to 12.

4. Arrange racks in upper and lower thirds of oven; preheat to 350°. Using a medium cookie scoop (about 2 Tbsp.), scoop dough and roll into balls. Arrange on 2 parchment-lined baking sheets, spacing about 2" apart.

5. Bake cookies, rotating sheets top to bottom halfway through, until slightly puffed and edges are just set, 10 to 12 minutes. Let cool 15 minutes.

6. Coating: In a small bowl, combine butter and reserved 2 Tbsp. cider.

7. In a medium bowl, combine granulated sugar and cinnamon.

8. Brush tops of cookies with butter mixture, then dip tops into cinnamon sugar to coat.
