MELTING SNOWMAN MIMOSA

1. Using a vegetable peeler, remove a wide strip of orange peel from 1 small orange, avoiding the white pith. Using a paring knife, cut a small (about ¼") triangle out of peel to create the nose. 2. Into a coupe glass, scoop 1 medium scoop of lemon sorbet. Scoop 1 slightly smaller scoop of sorbet on top of the first. 3. Place 2 mini chocolate chips on the top scoop as the eyes. Place the nose in the middle. Place remaining 2 mini chocolate chips as the buttons on the medium scoop. 4. Pour 4 oz. Prosecco down side of glass. Wait for it to start melting, then enjoy.

1. Grease an 8" x 8" baking dish with cooking spray. In a medium saucepan over medium heat, whisk 1½ cups lemonade and ¼ cup (50 g.) granulated sugar until sugar is mostly dissolved. Let cool. Evenly sprinkle 4 (½-oz.) packets unflavored gelatin over surface of syrup. Let sit until gelatin blooms and hydrates, 3 to 5 minutes.
