Cheese Corn Spinach Sandwich

Healthy vegetarian sandwiches offer a perfect balance of taste and nutrition, making them ideal for breakfast, lunch, or even a cozy evening snack.
This is a staple for cold days—warm, filling, and loaded with seasonal vegetables. Winter markets bring an abundance of carrots, capsicum, beets, cabbage, spinach, and fresh herbs. These vegetables not only add vibrancy but also boost immunity and keep you energized.
Start by lightly sautéing finely chopped carrots, capsicum, cabbage, and spinach with a pinch of salt, black pepper, and a little garlic. Spread this warm filling between slices of wholegrain or multigrain bread. Add a thin layer of hung curd or low-fat cheese for creaminess. Grill until golden on both sides. The blend of crunchy vegetables and warm bread makes for a nutritious and hearty sandwich that pairs wonderfully with a cup of herbal tea.
Winter spinach is known for its rich iron content and freshness, making it perfect for sandwich fillings. To prepare the mix, sauté spinach with garlic, boiled sweet corn, crumbled paneer, and a dash of mixed herbs. This combination provides protein, fiber, and warmth-exactly what a winter meal should offer.
