Curried Prawns

Prawns are a wonderful and healthy dish to serve to any hungry diner or companion. This recipe for curried prawns further enhances the taste of this delicious meat, and will not disappoint!
To make curried prawns with oyster mushrooms for four hungry diners, you will need:
500g of cleaned and peeled prawns
25mm of whole ginger root
3 cloves of garlic
2 sprigs of curry leaves
1 can of coconut milk
200g of oyster mushrooms
1 big red chilli
12 mint and coriander leaves, hand-torn
1 lemon
1 teaspoon of ground tumeric
1 teaspoon of freshly ground cumin
1 teaspoon of freshly ground coriander seeds Salt and freshly ground black pepper
2 or 3 tablespoons of sunflower oil and butter combined
