What's for dinner tonight?!

Steak with Pickled Veggies

ACTIVE 30 MIN. TOTAL 30 MIN. SERVES 4

4 yellow beets (about 10 oz), peeled and thinly sliced on mandoline

Pinch of sugar

4 Tbsp fresh lemon juice, divided

Kosher salt and pepper

3 Tbsp olive oil, divided

1 1/2-lb hanger steak, trimmed

1 Tbsp prepared horseradish, squeezed of excess moisture

1 tsp Dijon mustard

2 scallions, whites finely chopped, greens thinly sliced

2 Persian cucumbers, thinly sliced

4 oz watercress

image1 Heat oven to 425°F. In medium bowl, toss beets with sugar, 2 Tbsp lemon juice, and ½ tsp salt. Set aside.

2 Heat 1 Tbsp oil in cast-iron skillet on medium-high. Season steak with ½ tsp each salt and pepper and cook until browned, 4 min. per side. Transfer skillet to oven and roast to desired doneness, about 5 min. for medium-rare. Let rest 10 min. before slicing.

3 Meanwhile, in large bowl, combine horseradish, Dijon, scallion whites, and remaining 2 Tbsp lemon juice and 2 Tbsp oil. Add cucumbers and toss to coat, then toss with beets. Toss with watercress and scallion greens and serve with steak.

1 Tbsp canola oil

5 lbs boneless pork butt, trimmed Kosher salt

4 Tbsp five-spice powder, divided 5 cloves garlic, smashed 1 large onion, sliced

1½ cups pure maple syrup

½ cup reduced-sodium soy sauce

3 Tbsp rice vinegar

image1 lime, halved, plus 3 Tbsp fresh lime juice Cooked rice, scallions, and sliced red chiles and limes, for serving
