Burgers
These Smash Burgers give off serious In-N-Out vibes, thanks to the mustardgriddled patties and special sauce.
Copycat Animal-Style Smash Burgers ACTIVE 20 MIN. TOTAL 20 MIN.
SERVES 4
3 tsp olive oil, divided
1 onion, finely chopped Kosher salt
8 oz ground beef
2 Tbsp yellow mustard
4 slices American cheese Special sauce (recipe at right)
4 buns, toasted Lettuce, sliced tomato, and pickles
1 Heat 2 tsp oil in large skillet on medium. Add onion, season with a pinch of salt, and cook, stirring occasionally, 5 min. Add 2 Tbsp water and continue cooking until water has evaporated and onion is just tender; transfer to plate.
2 Shape meat into 4 patties.
Heat remaining tsp oil in large nonstick skillet on medium-high. Add patties and use large spoon to press each to about 3/2 in. wide. Cook until bottoms are crusty, 2 min.
3 Spread mustard on raw side of each burger, then flip and top with cheese. Cook to melt cheese, 1 to 2 min. more.
4 Divide sauce among buns and fill with beef patties, onion, lettuce, tomato, and pickles.
Special Sauce
In small bowl, stir together 2 Tbsp mayonnaise, 1 Tbsp ketchup, 1/2 tsp sweet pickle relish, and 1/2 tsp white vinegar.
Fries
Take frozen or fast-food fries to the next level by piling on all the toppings.
Cheesy BBQ Fries with Ranch Dip ACTIVE 15 MIN. TOTAL 35 MIN. SERVES 10
1 2-lb pkg. frozen crinkle-cut fries
1 Tbsp olive oil
21⁄2 tsp barbecue seasoning (we used Spiceology)
1⁄2 cup Greek yogurt
1⁄4 cup mayonnaise
