Five-ingredient ice cream cake
PREP + COOK TIME 55 MINUTES (+ COOLING) SERVES 6-8
300g frozen mixed berries 3 cups (750ml) ice cream, melted 1½ cups (225g) self-raising flour Pinch of salt 2½ cups (400g) icing sugar
Place berries in a sieve over a medium bowl. Set aside to thaw.
Reserve drained berry juice — you will need 3 tablespoons (see notes).
Preheat oven to 200°C/180°C fan. Grease and line a 1-litre (4-cup) loaf pan.
Place ice cream, flour and salt in a large bowl. Fold together until just combined. Add thawed berries and fold in until just combined.
Pour batter into loaf pan. Gently tap pan on the bench to remove any air pockets. Bake for 45 minutes or until a skewer inserted in the centre comes out clean. Cool in pan for 10 minutes. Turn out onto a serving plate and cool completely.
Add icing sugar to reserved berry juice and mix until well combined.
Drizzle berry icing over cake. Suitable to freeze.
Cheese scones with roasted grapesPREP + COOK TIME 45 MINUTES SERVES 6
350g grapes (see tips) 2 tablespoons caster sugar 2 tablespoons vinegar (see tips) 3 cups (450g) self-raising flour, sifted, plus extra 2 teaspoons baking powder 1 teaspoon salt ½ teaspoon ground white pepper 120g butter, chilled, cubed 200g hard cheese, finely grated, plus 20g extra (see tips) 1 cup (250ml) milk, plus extra for brushing Mascarpone or crème fraîche, to serve
Preheat oven to 220°C/200°C fan. Line an oven tray with baking paper and place in oven while preheating.
Combine grapes, sugar and vinegar in a small baking tray or shallow dish. Roast for 35 minutes or until softened and syrupy.
