Mexico City is in its golden era of cocktail culture. Once home to a small handful of recognisable names, today the capital is heaving with globally renowned drinking destinations. And it's leading the charge for North America on awards lists such as World’s 50 Best (last year, Mexico City landed four bars on the list, compared to three in New York City).
It feels like a cultural movement, and one that’s been bubbling under the city’s surface for decades, if not centuries. Mexico’s diverse agricultural landscape and unparalleled range of home-grown spirits have blessed modern bartenders with the perfect tools to experiment in fresh, exciting, and culturally distinctive ways. This has been amplified in recent years thanks to new technologies in the mixology space, such as rotary evaporators (used to enhance flavours via vacuum distillation) and centrifuges (high-performance machines that can clarify liquids).
