Bao Buns

Ingredients

• 250g all-purpose flour

• 5g yeast

• 20g sugar

• 5g baking powder

• 15ml oil

• 120ml warm milk/water

Method

1. Mix yeast, sugar, and warm milk—activate 10 mins.

2. Add flour, baking powder, oil—knead soft dough.

3. Proof 1 hour, punch down, shape into rounds.

4. Steam 10-12 mins until fluffy.

Wild Mushroom Masala

Ingredients

• 200g wild mushrooms (shiitake, oyster, chanterelle)

• 1 tbsp ghee/oil

• ½ onion, chopped
