DAL BAATI CHURMA: GARLIC-INFUSED LENTILS
No discussion of Rajasthani food is complete without dal baati churma, the quintessential dish of the state. While baati is baked or roasted wheat dough, the accompanying dal—a mix of lentils—is flavored with generous amounts of garlic. Crushed garlic is tempered in ghee, releasing a rich aroma, and then added to the lentils along with cumin, red chili, and asafoetida. The result is a fragrant, hearty, and comforting dal that perfectly complements the crisp baati and sweet churma.
