Raitas of Rajasthan: Cooling, refreshing, and perfect for summer
The Daily Guardian

Rajasthan, the land of deserts, forts, and royal palaces, is also known for its rich culinary heritage.
With a climate that often reaches sweltering highs, the food in Rajasthan is crafted not only to delight the palate but also to help combat the heat. Among the myriad of traditional dishes, raita is one of the most beloved accompaniments in Rajasthani cuisine, especially in the hot summer months.
Made primarily from yogurt, raitas are not only refreshing and cooling but also serve as the perfect side dish to balance the spiciness of Rajasthani food.
Raita is a yogurt-based dish, often seasoned with various herbs, spices, and vegetables, that provides relief from the scorching temperatures of Rajasthan. Raitas can be simple or elaborate, depending on the ingredients used, and they offer a refreshing respite from the heat.
Here's a closer look at some of the most popular types of raitas found in Rajasthan that are perfect for cooling down.
1. BOONDI RAITA
One of the most famous and widely consumed raitas in Rajasthan is Boondi Raita. This dish is made by combining crispy, small fried chickpea flour balls (boondi) with yogurt. The crunchy texture of the boondi contrasts beautifully with the smoothness of yogurt. The raita is spiced with ingredients such as roasted cumin powder, black salt, and sometimes even a hint of chili powder to enhance its flavor. It is often garnished with chopped coriander and a sprinkling of pomegranate seeds, which add a touch of sweetness to balance the savory and tangy yogurt.
Why it's cooling: The yogurt in Boondi Raita is a natural coolant, and the combination of spices like cumin helps in digestion and provides a cooling effect for the body, making it a perfect side dish during the summer.
2. CUCUMBER RAITA (KHEERA RAITA)

MERCEDES-BENZ GLS450d 4MATIC REVIEW
Cruising serenely at the Yamuna Expressway at around 90 km/h, I was passed by another GLS, that too in the same shade of Black, which compelled me to increase my pace to check if it’s a 450d as well or the previous 400d. Turns out it’s a 400d, and though I had the more powerful car, I slowed down as I didn’t want to give him an impression that I was trying to race.
