It has fed emperors and the ailing, saints and farmers, children and the elderly — and it has done so for thousands of years without ever needing to reinvent itself. A simple, soul-warming combination of rice and lentils cooked together in a single pot, khichdi is one of those rare foods that manages to be both humble and profound at the same time.Khichdi's origins are as old as Indian civilisation itself. References to the dish appear in Vedic literature, making it one of the oldest documented meals on the subcontinent. By the time the Mughal emperors arrived, khichdi had already become firmly embedded in everyday Indian cooking - but it found enthusiastic patrons at the royal court too. Emperor Akbar and his son Jahangir were both reportedly fond of the dish, which says something remarkable about its cross-cultural appeal: a meal eaten by peasants and emperors alike, often at the same time, without any contradiction.

The version that has roots in Ayurvedic tradition - sometimes called Vedic or Sattvic khichdi - is perhaps the most elemental of all. Made with equal parts basmati rice and yellow moong dal, it is cooked low and slow with ghee, cumin seeds, a pinch of asafoetida, fresh ginger, and turmeric until everything collapses into a soft, porridge-like consistency. The result is deeply nourishing, easy on the stomach, and quietly satisfying in a way that more elaborate dishes rarely are.
