Moroccan spiced lentil soup

THIS is a lovely nourishing broth filled with all sorts of good things.

There is a lot of vegetable chopping here and the neater the dice of vegetables are, the better your soup will look and taste.

It works well with either water, vegetable stock or chicken stock, though as is to be expected the chicken stock gives the most robust flavour.

I like to get all of the ingredients prepared and laid out in the order that they will be going into the pot.

I also do a quick check down through the list of ingredients to make sure I have included everything. This soup keeps perfectly and sometimes tastes better the next day.
