Creamy Sage and Garlic Pork Chops

4 (¾- to 1½-inch) bone-in pork chops
1½ tsp. dried sage
¾ tsp. salt
½ tsp. black pepper
2 Tbsp. butter
1 Tbsp. olive oil
15 fresh sage leaves
4 medium cloves garlic, minced (4 tsp.)
1 Tbsp. flour
½ cup low-sodium chicken broth or stock
½ cup dry white wine
¾ cup whipping cream
1. Pat pork chops dry with paper towels; sprinkle both sides with 1 tsp. dried sage and ¼ tsp. each salt and pepper.
2. Heat butter and oil in a very large skillet over medium heat. Add fresh sage leaves in an even layer; cook, turning halfway through, until crispy, about 1 minute. Transfer to a paper towel-lined plate using a slotted spoon; crumble when cool enough to handle.
3. Add chops to skillet; cook, turning halfway through, until browned, 6 to 10 minutes. Transfer chops to a plate (chops will not be cooked through at this point).
4. Add garlic to skillet; cook and stir until fragrant, about 30 seconds. Add flour; cook and stir 1 minute. Add broth and wine; cook, stirring constantly, until smooth and thickened, about 2 minutes. Stir in cream and remaining ½ tsp. each dried sage and salt and ¼ tsp. pepper. Simmer until sauce is thickened and bubbly, about 2 minutes.
