Miso noodle super bowl

SERVES 2

Ingredients

80g rice vermicelli noodles

1 litre vegetable stock

1 garlic clove, crushed

A thumb-sized piece of ginger, grated

1 tsp soy sauce

6-8 baby sweetcorn, sliced in half lengthways

80g mange tout, trimmed

2 handfuls leafy greens (spinach, cavolo nero or pak choi)

2 tbsp white miso paste

1 red chilli, finely sliced (use half for milder heat)

1 lime (zest and juice), plus a wedge to serve

1 tsp sesame oil (optional)

Fresh coriander, to garnish (optional)

1. Place the rice vermicelli noodles in a heatproof bowl and cover with boiling water. Soak for 3-4 minutes until softened, then drain the noodles and set aside.
