Halloumi and courgette kebabs

SERVES 2

Ingredients

½ red chilli, finely diced

1 tbsp olive oil

1 courgette, cut into 1cm thick discs

250g halloumi, cut into 12 cubes

1 tsp runny honey, plus extra to serve

2 tbsp chopped mint

1. Put the chilli in a large bowl with the olive oil. Add the courgette and halloumi, toss together, then cover and leave to marinate for up to an hour.

2. Preheat the air fryer to 180°C. Assemble the kebabs by threading alternate pieces of courgette and halloumi on to metal or soaked wooden skewers.

3. Cook in the air fryer for 8-10 minutes, turning the skewers once and recoating with any leftover oil halfway through.

4. Sprinkle with the honey and chopped mint, and serve immediately with extra honey on the side.
