Cheat's peanut butter fudge MAKES 64

INGREDIENTS

500g smooth peanut butter

397g can sweetened condensed milk

Pinch of salt

100g icing sugar, sifted

100g dark chocolate chips

100g chopped peanuts

METHOD

In a large saucepan, melt together the peanut butter, condensed milk and salt over medium heat. Remove the saucepan from the heat and stir to loosen the mixture. Carefully add in the icing sugar and stir until combined and very thick.

Empty the mixture into the prepared cake pan lined with baking parchment and leave the edges of the paper to overhang. Cover the whole of the base with the mixture – the weight of it will hold down the parchment. It will be quite oily and you can use the back of a spoon to smooth the fudge out.
