One-Pot Chicken Sausage Pasta

To make this tasty pasta toss even richer, Gina likes to finish it with a dollop of ricotta cheese

1 (28 oz.) can whole peeled tomatoes

1 tsp. extra-virgin olive oil

12 oz. sweet or spicy Italian chicken sausage links*, casings removed

2 cloves garlic, thinly sliced

8 oz. regular or gluten-free short pasta, such as shells, penne rigate, or rigatoni

1/2 tsp. kosher salt

Freshly ground black pepper

1/4 cup freshly grated Parmesan + plus more (optional)

1 cup loosely packed fresh basil leaves, large leaves torn

*Read label to be sure this product is gluten-free

Set fine-mesh sieve over bowl and drain tomatoes, lightly pressing on tomatoes to release any excess liquid; reserve liquid. Roughly chop tomatoes. Pour liquid into measuring cup and add enough water to total 2½ cups.

Heat large heavy pot or Dutch oven over medium-high heat. Add olive oil, then crumble in sausage. Cook, breaking up sausage into small pieces with wooden spoon, until browned, 6-8 min. Add garlic; cook until fragrant, about 2 min.

Add tomatoes, reserved liquid and pasta; season with kosher salt and pepper to taste. Bring to boil over high heat, then reduce heat to medium-low so sauce bubbles steadily. Cover; cook, stirring every 5 min. until pasta is al dente and liquid is absorbed, 20-25 min. Remove from heat. Stir in 1/4 cup Parmesan, then basil just to wilt. If desired, serve with more Parmesan.
