Quinoa Bowl with Lemon Vinaigrette

The whole grains in this bowl brim with anti-inflammatory compounds

• 1 cup tricolor quinoa
• 1 clove garlic, minced
• 1/2 cup olive oil
• 2 Tbs. wine vinegar
• 1 Tbs. lemon juice
• 1/4 tsp. ground cumin Mixed veggies, like avocado, tomato, peppers, beans, onion and lettuce

1 In medium pot, mix quinoa, garlic and 3 cups water; over medium-high heat, bring to a boil. Cover; reduce heat to medium-low. Cook until water is absorbed, about 15 min. Fluff with fork.
