Knead-free FOCACCIA

This super-easy, tray-baked loaf is delicious with a salad or main

Easy no-knead overnight focaccia SERVES 6-8 PREP & COOK 45 MINUTES (+ PROVING)

4 cups (640g) bread (or baker’s) fl our (see note)

2 teaspoons (7g) instant dried yeast

1 teaspoon caster sugar 2 teaspoons fi ne table salt 525ml warm water Extra virgin olive oil, for

greasing and drizzling Sea salt fl akes, for sprinkling TOPPING 2 garlic cloves, sliced thinly

(see note) 250g small red-skinned

potatoes, sliced thinly 2 tablespoons extra virgin

olive oil 2 sprigs rosemary

1 Combine flour, yeast, sugar and salt in a large bowl.

Add warm water and mix until well combined. Liberally drizzle (about 2 tablespoons) oil over the surface of dough.
