Huntley & Palmers festive platter

1 Choose a platter large enough for your occasion. Start by placing the Huntley & Palmers Platter Bites and larger items such as the Food Snob cheeses.

2 Fill small jars and bowls with the Barker’s Platter Makers chilli jams and other small items. Place these on the platter with meats and fresh fruit.

3 Fill gaps with dried fruit and nuts.

4 Add some finishing touches such as honeycomb on the blue cheese, fresh herbs and edible flowers. Set out knives, spoons and voilà!

Aoraki salmon & avocado verrines

SERVES 4 OR MORE
PREP TIME 20 MINUTES

1 fillet Aoraki Pōhutukawa Hot Smoked Salmon (allow 40-50g per portion)
1 pot Aoraki Malossol Caviar (optional) 
½ cucumber, peeled, cubed Sea salt 
1 tbsp olive oil
1 tbsp lemon juice
½ tsp dried chilli flakes
1 NZ Avocado, quartered, skinned, cubed
1 tbsp coarsely chopped
