Make these ghoulish treats for Halloween on 31 October

Bat cupcakes

MAKES 12 PREP 30 mins

COOK 25 mins

* 40g cocoa powder

* 200g plain flour

* 1tsp baking powder

* 200g soft light brown sugar

* 200g unsalted butter, melted, cooled

* 3 medium free-range eggs, beaten

FOR THE ICING

* 200g unsalted butter

* 400g icing sugar

* 1tbsp milk

FOR THE DECORATION

* 12tsp raspberry jam

* 15 Oreo biscuits, separated, plus extra for crumbling

* Googly eyes and edible stars, to decorate

YOU WILL NEED

* 12-hole muffin tin, lined with cases; piping bag with large star nozzle

Heat the oven to 160C Fan/Gas 4.

1 Using an electric mixer, beat all the cake ingredients together in a large bowl until smooth. Divide the batter between the muffin cases and bake for 25 mins until risen. Transfer to a wire rack and cool.

2 Using an electric mixer, beat the icing ingredients together in a large bowl until pale and fluffy. Reserve 2tbsp of the icing, then transfer the rest to a piping bag.

3 Cut a small hole in the top of each cake and fill with jam, then pipe a rosette of icing on to each cake.
