Supergreen soup
Brimming with antioxidant-rich vegetables, this soup is the secret ingredient for radiant skin.
SERVES 6
READY IN 15 mins COOK 20 mins
* 2tbsp olive oil
* 2 large onions, sliced
* 3 sticks celery, sliced
* 1 leek, sliced
* 1.5ltr vegetable stock
* 250g Tenderstem broccoli, chopped
* 1 courgette, chopped
* 125g kale, shredded
* 250g frozen petits pois, defrosted
* 2 x 400g cans cannellini beans, drained and rinsed
* Pesto, soured cream, toasted mixed seeds and wholemeal bread to serve (optional)
1 Heat the oil in a large pan. Cook the onions, celery and leek until softened. Add the stock, then bring to the boil. Add all the green veg and simmer for 20 mins until soft. Whizz the soup with a stick blender, then mix in the beans.
2 Heat through and serve with a swirl of pesto and soured cream, a sprinkle of seeds and bread, if using.
Spanish orange chicken
This one-pot wonder is bursting with vitamin C-rich orange, making it a winning recipe for healthy, nourished skin.SERVES 4 PREP 25 mins COOK 45 mins
* 1tbsp olive oil
* 1kg pack chicken thighs and drumsticks
* 2 large red onions, sliced
* 2 garlic cloves, roughly chopped
* 200ml fino sherry
* 4 oranges, 2 juiced, 2 sliced into thin rounds
* Small bunch thyme
* 100g pitted green olives
1 Heat the oil in a shallow casserole over a medium-high heat. Season the chicken and brown all over. Set aside.
2 In the same pan, fry the onions for 10 mins, stirring regularly until softened and beginning to caramelise, then add the garlic and cook for 2 mins. Pour in the sherry and orange juice, then simmer for 5 mins.
