STEAMED BLUE CURAÇAO CHENNA PUDDING

METHOD

Please do not use ready-made paneer available in packets. Making chenna is a little time consuming but tastes good in this recipe. Bring the milk to boil. Lower the heat and add the lemon juice.

Allow the milk to curdle. Pass through a strainer to drain out water. Now place in a muslin cloth and tie it up so that excess water trickles out. This could take an hour.

Place this prepared chenna in a mixing bowl. Add the remaining ingredients and blend. Blend with a spoon or whip to obtain a smooth flowing paste/batter which is neither too thick nor too runny.

Pour into moulds. Cover each mould with aluminium foil and steam in a steamer for 15-18 minutes.

Allow to cool completely. Place in a fridge with the foil on for 2 hours. Unmould and garnish with basil/ tulsi or even rose petals or walnuts, whatever is available. This makes for a delicious and goodlooking dessert.
