3 WAYS WITH...BROCCOLI

It's easy being green with these tasty meals

CREAMY BROCCOLI, SPINACH & POTATO SOUP

SERVES 4
PREP 15 MINS COOK 30 MINS

• 2 rashers bacon, rind removed, chopped

• 1 onion, chopped

• 1 garlic clove, crushed

• 3 potatoes, peeled, chopped

• 1.5 litres (6 cups) chicken stock

• ¼ tsp ground nutmeg, plus extra to sprinkle

• 1 bunch English spinach (see tip), trimmed, chopped

• 500g broccoli, cut into florets

• ¼ cup thickened cream

1 Heat an oiled, large saucepan over high heat. Add bacon. Cook, stirring 2 mins or until crisp. Remove from pan.

2 Add onion and garlic. Cook and stir 2 mins or until onion is tender. Add a potato. Cook and stir 2 mins. Stir in stock and nutmeg. Bring to boil. Reduce heat. Simmer, partially covered, 15 mins or until potato is almost tender. Add spinach and broccoli. Cook 10 mins or until broccoli is tender. Season.

3 Using a stick mixer, puree mixture until smooth. Stir over low heat until hot.
