>> Chicken carcasses/backs/ bones — 1.2 kg

>(use leftover frames + wings + necks)

>> Water — 3.5 litres

>> Onion — 2 large, halved (skin on)

>> Garlic—1 full bulb, halved

>> Ginger — 150 g, sliced thick

>> Spring onion whites — 6 stalks

>> Whole black pepper — 2 tsp

>> Bay leaf —1

>> Kombu (optional) — 1 small 5x5 cm piece

>> Salt —to taste (add later)

>> Soy sauce — 4 tbsp

>> Fish sauce — 1½ tbsp

>> Sugar —1 tsp

>> Sesame oil — 1 tsp

>> Boneless chicken thigh — 300 g

>> Soy sauce — 1½ tbsp
