Ingredients:

• Grapeseed or canola oil

• 1 large yellow onion, diced

• 3 Hatch or Cubanelle peppers, seeded and diced

• 3 garlic cloves, finely chopped

• 1 serrano or jalapeño chile, seeded for mild if desired, finely chopped

• Salt and black pepper

• 1 pound ground turkey, preferably dark meat

• 3 tablespoons chilli powder

• 1 tablespoon ground coriander

• 2 teaspoons ground cumin

• 1 pound frozen kale, thawed

• 2 (14.5-ounce) cans diced tomatoes with green chiles

• 2 cups chicken broth, plus more if needed
