JANUARY’S darkness and chill can often feel bleak and depressing, but it doesn’t have to feel that way.
Despite having to endure freezing temperatures, heavy snowfall and being submerged into darkness throughout most of winter, Scandinavians are known for their upbeat mindset.
Curious about how we can better prepare for the long, grey weeks ahead, we spoke with Danish cook, bestselling author and founder of the ScandiKitchen Bronte Aurell who shared some tips on how approach the colder months the Scandi way...
“In Scandinavia we live in darkness for several months, so we know it's coming and there's no stopping it,” says Bronte. “I think that starting to accept the fact that it will be dark and cold for a few months helps sets the scene a little bit more.”
