Egg and Spinach Frittata

Ingredients 4 eggs 1 cup fresh spinach, chopped 1 small tomato, diced 1/2 bell pepper, diced 1/4 onion, finely chopped 1-2 tbsp milk (optional) 1 tsp olive oil Salt and pepper to taste

Method

Preheat your oven to 180°C. Heat olive oil in a small oven-safe skillet and sauté the onions, bell pepper, and diced tomato for 3-4 minutes until softened.

Add the spinach and cook for an additional 1-2 minutes until wilted.
