Chicken Larb Lettuce Cups

SERVES 4 PREP & COOK 25 MINS

1 small bunch fresh coriander

1 red onion, halved, thinly sliced

2 cloves garlic, crushed

1 tblsp fresh lemongrass paste

500g chicken mince

200g green beans, sliced

2 tblsps fish sauce

2 tblsps lime juice

8 large butter lettuce cups

Sliced red chilli and lime wedges, to serve

1 Finely chop coriander roots and stems. You will need 1/4 cup. Set aside the remaining leaves for serving.

2 Heat an oiled wok over a high heat. Add onion, garlic, lemongrass, coriander roots and stems. Stir-fry for about 2 minutes, or until onion is soft.

3 Add chicken. Stir-fry to break up mince for about 5 minutes, or until cooked. Add beans. Stir-fry for about 2 minutes, or until just tender.

4 Combine sauce, juice and 2 tblsps water in a jug. Add to wok. Stir-fry for a further 2 minutes, or until hot.

5 Divide chicken mixture among lettuce cups. Top with coriander. Serve with sliced chilli and lime wedges.
