Spiced apple layer cake with cardamom mascarpone frosting

Ingredients

Serves 10-12

For the cake

  • 100g golden sultanas

  • 2tbspn Calvados, apple juice or Earl Grey tea (for soaking)

  • 3 large eggs

  • 200g light-brown sugar

  • 100g golden caster sugar

  • 150ml light olive oil

  • 1tspn vanilla-bean paste

  • 4 medium cooking apples (about 500g), peeled, cored and coarsely grated

  • 200g self-raising flour

  • ½tspn baking powder

  • 1tspn ground cinnamon

  • ½tspn ground ginger

  • A pinch of sea salt

  • 100g ground almonds

For the apple decoration

  • 2-3 cooking apples

  • ½ lemon, juice of

  • 1tbspn caster sugar
