Mac 'N' Cheese

PASTA

130 gms macaroni

FOR THE SAUCE

20 gms unsalted butter

20 gms refined flour

100 ml amul toned milk

5 gms chives

5 gms garlic (chopped)

20 gms cheddar cheese

20 gms mozzarella cheese

PROCESS FOR MAC SAUCE

• Heat unsalted butter in a pan and add refined flour to create a roux.

• Gradually pour in milk, whisking continuously until the mixture thickens to a sauce-like consistency and set aside.

FOR MACARONI

• Boil water in a pan with a pinch of salt and a drizzle of olive oil.

• Cook the macaroni for 10-12 minutes until al dente. Drain.

FINAL ASSEMBLY

• Heat olive oil and sauté garlic.

• Add the prepared Mac sauce and season to taste.

• Mix in the cooked macaroni and stir well.

• Incorporate cheddar and mozzarella cheese into the mixture.

• Transfer the mixture to a skillet, top with more cheddar and mozzarella cheese, and gratinate in the oven until golden brown. Serve hot.

Piri Piri Chicken Grilled Cheese Sandwich

FOR CHICKEN MIXTURE

80 gms chicken thigh

20 gms piri piri seasoning

15 gms red bell pepper

10 gms onion

olive oil as needed

salt to taste

pepper to taste

SANDWICH

2 slices of sourdough bread Mayonnaise as needed

30 gms of cheddar cheese

30 gms of mozzarella cheese

Butter for grilling

PROCESS FOR THE CHICKEN MIXTURE

• Marinate chicken, redbell pepper and onion with olive oil, salt, pepper and piri piri seasoning.

• Mix everything well to ensure the ingredients are evenly coated.
