Cream Cheese Ranch Mashed Potatoes

  • 3 lb. russet potatoes, peeled and cut into 2-inch pieces

  • 1 (8-oz.) pkg. cream cheese, softened

  • 1 cup sour cream

  • ½ cup butter, softened, plus a pat for serving

  • 1 (1-oz.) pkg. dry ranch seasoning

  • Chopped fresh herbs, such as parsley, dill, and/or chives, for garnish

1. Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 20 minutes. Drain; return to pot and mash.

2. Meanwhile, mix cream cheese, sour cream, butter, and ranch seasoning with an electric mixer at medium-low speed in a large bowl until smooth. Stir in mashed potatoes; beat just until desired consistency is reached (do not overmix).

3. To serve, top potatoes with pat of butter and garnish with fresh herbs. (Chill, covered, up to 5 days. To reheat, microwave on 70% power, stirring occasionally, until heated through, 2 to 5 minutes.)
