When I opened an email on my iPhone it sent Safari off to some strange websites ending with a black page that I closed immediately. What should I do now to clear any unwanted cookies?

If your browser gets hijacked like this, your immediate action should to be close that tab and quit the app, to minimise any opportunity for malicious software to be downloaded.
