WHY INDIAN DINERS WANT IT FASTER, FRESHER, AND FLASHIER THAN EVER

|May - June 2025
India’s restaurant industry is in the middle of a bold reinvention — driven by rising demand for speed, personalised dining, digital-first experiences, and an audience that's no longer satisfied with the ordinary.
No longer confined to traditional models of dining, it's now powered by rising demand for convenience, evolving consumer habits, digital influence, and a hunger for innovation. In one of the world’s most dynamic consumption markets, the 1.4 billion-strong Indian population is not merely absorbing global food trends—it’s actively reshaping them. With a growing appetite for creative experiences, diverse formats, and speed over formality, the Indian food service industry is opening up possibilities for all kinds of players. This transformation was at the core of discussions at the Restaurant India - Karnataka Edition, held in Bengaluru and organised by Restaurant India in partnership with Franchise India. The day-long event convened a powerful mix of founders, chefs, QSR leaders, fine and casual dining entrepreneurs, and delivery experts, who unpacked how restaurants can build businesses that not only keep up—but lead.
Speed Trumps Ambience
Consumers today are prioritising speed and ease over the classic comforts of dining out. Gaurav Pande, Executive President at Popeyes, Jubilant FoodWorks, emphasised the shifting dynamic: “People want food fast. What used to be a 30-minute delivery standard has now shrunk to 10-15 minutes. Most aggregators have built-in panels that spotlight the quickest delivery options. The entire system is now driven by one expectation—immediacy.” This trend is pushing brands, both old and new, to rethink their operational models. Efficiency has become non-negotiable.
