When Eskom is dire … light a braai fire

Braaing is as much a national pastime for many South Africans as is camping and the outdoors; with good reason. Not only do we have a wonderfully moderate and sunny climate that is perfect for outdoor fun, but we have some of the most scenic and picturesque landscapes in which we can commune with nature and enjoy a good braai with friends. But, hosting the perfect braai means that you need to take special care of your braai and grid to ensure the cleanest, healthiest and tastiest food offerings.
START WITH A CLEAN GRID
After years of braaing, I can safely say that the best way to clean a grid is to burn off any sediment and grime from the last braai. When the sediment is white and powdery, simply brush it off with a wire brush. Not only does the heat from the fire (wood, charcoal or gas) kill off any germs that might be lurking on the dirty grid, it also chars the grime and makes it very easy to remove. If you don’t have a wire brush, simply give the grid a few good hard taps with your metal tongs and the charred bits will fall off, leaving you with a clean grid. I personally like to put my dirty grid right on top of the pile of burning wood and get it red hot, to burn off any sediment. Just bear in mind that the metal of a red-hot grid is a lot softer than a cool grid and is more prone to bending, so be careful not to hit it too hard with your tongs to remove any dirt and grime.
