Caesar Chicken Bake

Serves 4, Prep and Cook 35 mins.

200g packet shortcut bacon, cut crossways into 2cm strips

600g chicken tenderloins

250g punnet cherry tomatoes

1/2 x 450g packet garlic Turkish bread, cut into 2cm cubes

1/2 cup grated parmesan

1/4 cup bottled creamy

Caesar dressing

1 Heat an oiled, large non-stick frying pan over a high heat. Add bacon. Cook, stirring until crisp. Transfer to a square ovenproof dish (10-cup capacity).

2 Add chicken to same heated pan. Cook, turning for about 3 minutes, or until browned. Transfer to dish with bacon. Scatter over tomatoes. Stir to combine.

3 Place bread cubes and half parmesan in a large bowl. Generously spray with olive oil. Toss to combine. Sprinkle over chicken in dish.

4 Cook in a hot oven (2000) for 10 to 15 minutes, or until bread is crisp and chicken is cooked. Remove from oven.

5 Sprinkle with remaining parmesan. Drizzle with dressing. Scatter over chopped fresh parsley (optional). Serve with baby cos lettuce (optional).

TIP

Make the most of leftover Turkish loaf. Process the remaining half of the loaf in a food processor to make fine crumbs. Freeze for another use.
