Something Fishy?

Has cooking fish got you floundering? Being the bacteria-loving person that I am, I feel I should point out that there are millions of bacteria and enzymes whose sole goal is to make your fish stink.

This is because marine fish contain varying amounts of something called trimethylamine oxide in their muscles. What’s so important about trimethylamine oxide? A lot. Marine fish need trimethylamine oxide because it contains several key amino acids that help fish stay alive in salty water. Of course this is great for the fish — just not so great for us; because once a marine fish joins Davy Jones, the bacteria and enzymes living on its body do their chemical reaction magic, and convert the trimethylamine oxide into trimethylamine — the stuff that causes fish to stink.
