Morning bliss

Whip up the egg whites separately and fold them into the batter just before adding to the waffle iron. Then make them even tastier with homemade peach syrup!

To make: Pit and slice 5 peaches. In medium bowl, combine ¼ cup sugar, ¼ cup lemon juice, 1 tsp. lemon zest and half the peach slices. Toss well to coat; let sit at least 10 minutes or until peaches have released their juices. With slotted spoon, remove macerated peaches, reserving syrup. Pour over hot waffles and top with remaining peach slices before serving.
