Taste summer in every delicious bite with this classic pairing

Strawberries & CREAM

Strawberry fridge cake

This easy no-bake pud is great for entertaining.

SERVES 8-10

READY IN 20 mins, plus chilling

* 250g mascarpone

* 2tsp vanilla paste/extract

* 40g icing sugar, sifted

* 300g double cream

* 250g fresh strawberries, 200g of them sliced

* 200g pack of cookies (we used Maryland)

* 50g white chocolate, shaved or grated

YOU WILL NEED

*2lb loaf tin

1 Beat the mascarpone, vanilla and sugar until just smooth. Add the cream and whisk to medium peaks.

2 Put a fifth of the cream (60g) in the loaf tin. Cover with half the strawberry slices, followed by a layer of cream. Add half the cookies, breaking them up to fit in all the gaps (reserve a few for the top). Repeat the layers to fill the tin. Chill overnight.
