Boozy beverages to bring some cheer

MIDORI APPLE COOLER
SERVES 4
PREP 20 MINS

• 1 honeydew melon

• 4 small bamboo skewers

• ½ cup Midori

• ⅓ cup vodka

• 1½ cups apple juice, chilled

• ½ cup loosely packed fresh mint leaves, plus extra to decorate

• 1 small Granny Smith apple, quartered, cored, thinly sliced

• 2-3 cups ice cubes

• 2 cups sparkling natural mineral water or lemonade, chilled

1 Using a melon baller, scoop out 12 balls from honeydew. Thread three balls onto each skewer (or wooden popsicle sticks).

2 Combine Midori, vodka and juice in a medium jug. Refrigerate for 1 hour.
