MEATBALLS WITH LENTILS & TOMATO SUGO

SERVES 4 PREP & COOK 40 MINS

  • 250g pork mince

  • 250g beef mince

  • 70g breadcrumbs

  • 100g brown onion, grated coarsely

  • 1 clove garlic, chopped finely

  • 1 free-range egg, beaten lightly 2 tbsp fresh basil, chopped

  • 2 tbsp parsley, chopped, plus extra to garnish

  • 1/4 cup (60ml) extra virgin olive oil

  • 500g jar tomato sugo (pasta sauce)

  • 400g can lentils, drained

  • 40g parmesan

1 To make the meatballs, place the pork mince, beef mince, breadcrumbs, onion, garlic, egg, basil and parsley in a large bowl. Season with salt and pepper. Use clean, wet hands to mix until well combined.

2 Shape two tbsp (approximately) of the mince mixture into large balls; you should make about 16 balls in total.
