3-4 sweet potatoes

1 tbsp maple syrup

1 tbsp soy sauce

4 tbsp olive oil

2 tsp sea salt

4-5 thyme sprigs, leaves picked

80g bacon lardons

120ml soured cream

1 tbsp milk

1 lime, 1/2 juiced, 1/2 sliced into wedges

50g feta (optional)

Handful of coriander leaves
