I make a version of this soup every year, when soup season strikes and I am craving something hot, substantial and aromatic.
Just like cradling a mug of coffee or tea instantly seems to lower my blood pressure, so, too, does holding a large bowl filled with a warm and satisfying meal on a very cold Maine day. While I understand the appeal of broth-based soups-chicken noodle is truly good for our souls, and for colds-I am partial to a thicker consistency in my soups.
This one is just that. Note that the extra step of blending the soup is important here to achieve that texture. And if you want something to chew or desire a contrasting little crunch as you enjoy this liquid meal, making extra large croutons is a fine idea.
