Pistachio-Honey Toffee

MAKES 48 (2-INCH) PIECES

1½ cups chopped salted, roasted pistachios (from a 12-oz. pkg.), divided

2 cups (396 g) granulated sugar

2 cups (4 sticks) unsalted butter, cut into 1-Tbsp. slices

2 Tbsp. honey

1 tsp. kosher salt

1½ tsp. ground cinnamon

1 tsp. pure vanilla extract

LINE a large rimmed baking sheet with parchment paper. Sprinkle 1 cup pistachios evenly over parchment.
