ONE OF THE BEST COCKTAILS I've ever had was at a street fair in Sanlúcar de Barrameda in the south of Spain. It was early June and blazingly hot. Hundreds of people—maybe even thousands—were dancing in the streets, and every last one of us was drinking rebujitos. Lots of rebujitos. And why not? The drink is beyond simple: just manzanilla sherry, 7UP, and ice. Low alcohol, crazily refreshing, and a good replacement for the buckets of sweat that dancing for hours under the Andalusian sun will drain from you.
That's what I want in a summer cocktail. Super easy, super refreshing, and low in alcohol. And forgiving of variations—you prefer your rebujito with Sprite? Go for it. Here are three similarly simple and similarly fantastic ways to drown the summer days.
