Barbecue Lamb Cutlets with Mango Cheeks

SERVES 4

INGREDIENTS

2 mangoes, sliced into cheeks

8 lamb cutlets

Salt and pepper

1 tsp extra virgin olive oil

DRESSING

1 cup chopped fresh coriander

1 cayenne chilli

Finely sliced juice of 1 lime

1 tblsp maple syrup

METHOD

1 Score the mango cheeks with a noughts and crosses grid. Season the lamb with salt and pepper.

2 For the dressing, put all the ingredients in a jar and shake well.

3 Heat the olive oil on a barbecue or hotplate, and cook the lamb and mango until the mango looks golden brown and the lamb is cooked to your liking.

4 Serve with the mango cheeks turned out and dressing drizzled over the lamb.
