Cake of Kisses

MAKES 1 CAKE

INGREDIENTS

• 8 egg whites (large size is essential)

• 2 cups castor sugar

• 1 or 2 drops pink food colouring

• 3 x 300ml cartons thickened cream

• Aluminium foil

METHOD

Cover two large flat oven trays or scone trays with aluminium foil. On the first tray, mark two circles, one 15cm, one 10cm in diameter. On the second tray, mark three circles, 12cm, 8cm and 5cm in diameter. (Saucers, cups, jars or lids of the right sizes can be used as guides.) The meringues are made in two batches, one using five egg whites, the other using three egg whites. Before making the second batch, cover the trays with fresh aluminium foil.
