Salmon stars with dill cream

MAKES 12 STARS

Ingredients

6 slices of dark rye bread

Thinly sliced smoked salmon

For the dill cream

100ml sour cream

1 tsp Dijon mustard

½ a garlic clove, crushed

A handful of dill, freshly chopped (save a few sprigs to garnish)

Zest of ½ a lemon

Juice of ½ a lemon

1. Start with the dill cream, add all the ingredients to a bowl and mix until fully combined. Set aside.

2. Lightly toast the bread, then allow it cool to room temperature.

3. Top with the dill cream and then the salmon slices.

4. Use a star-shaped cookie cutter to cut each slice into as many stars as possible.

5. Garnish with a sprig of dill and serve with lemon wedges. Gazpacho with poached shrimp
